If you follow me on Instagram you may already know that I was interviewed on “All Things Vegan”, a radio show in Bend, OR. I was really nervous but it was so silly because Barbara and Judy were so nice! As soon as I entered I noticed John Lennon was playing, and it is quite honestly our favorite station. I’m not just saying that, they play phish and string cheese incident, I mean-how cool is that! It was such a wonderful experience and I feel very grateful to be a part of this wonderful community. It was so much fun and such an honor, I hope I can keep inspiring others to try a plant based diet.

On the homestead; Meadow is all the suddenly calling me “mom” not mommy, and it is driving me a little nuts, haha. I feel like I have a teenager, “moooom” “moom” “mom” Its kind of cute but i miss “mommy”. So I keep asking her to say mommy but she refuses. She is turning two at the end of the month and I’m still in shock.  She is getting so tall and her golden locks, aka mullet, is almost not a mullet.

She’s a big girl now and big girls like helping “MOM” in the kitchen so I made pasta.

Pasta is a fairly simple dish to prepare that is often overlooked by the convenience of ready-to-go prepackaged fettuccine. Fresh homemade pasta consists of flour, a pinch of salt and water… and that’s it.  Yes, you can find recipes with oil, eggs, and different types of flour but the recipe I use is simple and straight to the point.  It works every time and I always have the ingredients available.

The results are fantastic; silky and smooth.

You only need to combine 2 cups of all purpose flour and a pinch of salt in the bowl of your electric mixer. Slowly start pouring warm-hot water and knead with a hook for 8 minutes. You then roll it out and cut it into fettuccine. I do have the kitchen Aid pasta attachments which makes it effortless.

Tips For Best Results: As soon as you cut the noodles immediately place them into the ready-to-go boiling water. Fresh pasta takes seconds to cook, only boil for about 1 minute and remove. If you aren’t ready to boil them, you can save them from becoming a mushy mess by drizzling any type of oil on the noodles and let them rest in a bowl or strainer until you’re ready.

  • 2 cups All Purpose Flour
  • 1/2 cup warm-hot water
  • pinch of salt


  1. Combine the flour and the salt first into a mixing bowl. Slowly add the water, and adjust if it is too dry add more, if it's too wet add more flour.
  2. Knead until smooth.
  3. Section into a few pieces of dough.
  4. Flatten out a piece with a rolling pin or by hand.
  5. If using a kitchenaid with pasta attachments, use the flat/lasagna attachment from settings 1-3 followed by the fettuccine attachment.
  6. If using hands, flatten very thin with a rolling pin and quickly slice with a knife individual noodles.
  7. Place into boiling water immediately, cook for about 1 - 2 minutes, fresh pasta cooks very fast.
