You can’t go wrong with this fluffly vegan pancake recipe. I grew up with my mom making us pancakes on special occasions. I knew I had a find an easy vegan pancake recipe to continue on the tradition with my children.
As you pour the batter into the lightly greased pan, you watch the pancakes get so fluffy. It makes me so happy! Who knew dairy-free, no egg, fluffy pancakes were possible.

I’ve always been a pancake type of girl but my sister loves french toast. Thankfully theres not many recipes you can’t veganize 😉 You can’t go wrong with this recipe, taste like good old fashioned pancakes. Serve them warm with maple syrup and a cup of almond milk. Meadow loves when i make pancakes and although she requests them quite often, i make them on special occasions just like my mama. Enjoy!
- 1 cup of flour
- 1 tbsp of sugar
- 1 tbsp of baking powder
- 1 tbsp ground flax seed
- pinch of salt
- 1/2 tsp of vanilla extract
- 1 cup of almond milk
- 2 tbsp of coconut oil
- Mix all the ingredients thoroughly, heat a lightly oiled pan in medium heat. Pour approximately 1/4 of cup into the pan. Cook until brown on both sides. Serve with maple syrup and fresh fruit, enjoy!
