I love comfort food but I’m also a health nut and this easy vegan broccoli soup hits the jackpot.
It is very easy to prepare, one pot type of soup. You add all the ingredients and forget about it for 35 minutes then boom, its done. It taste homey, comforting and the perfect healthy meal for a cold day.
Vegan Broccoli soup has become a staple during the fall and winter months. I like chopping up crusty french bread into cubes then toasting them with a little bit of olive oil. But if you’re gluten free, just opt without and its just as tasty.
After all the veggies are nice and soft, personally, i smash them with a food masher instead of blending it. I like the soup chunky and its faster and easier for me. However, feel free to blend it smooth.

- 6 medium russet potatoes peeled and diced
- 3 carrots diced
- 1 shallot
- 2 garlic cloves minced
- 1/2 yellow onion diced
- 4 cups of chopped broccoli
- 32oz of veggie broth
- 1 cup of almond milk
- 1/2 cup of nutritional yeast
- 2 tbsp of lemon juice
- salt and pepper to taste
- Combine all the veggies and liquids together.
- Simmer until veggies are tender.
- Smash with a food smasher.
- Add salt and pepper to taste.
- Top with croutons
