Growing up, french toast were my favorite! Now that i have Meadow, we like passing on some of our favorite childhood memories on to her. Just because we have a plant based diet doesn’t mean she will miss out on all the fun food! So here it is, vegan french toast; super easy, simple, and only 4 ingredients!
1 can of coconut milk
1 tsp of cinnamon
1 tsp of vanilla extract
Whisk the coconut milk, cinnamon, and vanilla extract together while you heat a non stick skillet on medium heat with a little bit of coconut oil. Once you have your “egg” mixture, dip your bread of choice then cook until golden brown on both sides. Serve with maple syrup and fresh fruit. Also, you can make your own powdered sugar by blending the sugar in a food processor!
On a side note, I always use sourdough bread because not only is it naturally vegan but it contains the bacteria Lactobacillus in higher quantity than other breads which makes it easier to digest. You can find vitamins B1-B6, B12, folate, thiamine, niacin, riboflavin, Vitamin E, selenium, iron, manganese, calcium, and the list goes on! It must be the healthiest bread out there!
